Greek salad

Ingredients

1 large Roma tomato

½ Lebanese cucumber

½ green capsicum

¼ red onion

20 pitted Kalamata olives

100g low fat Greek feta cheese

Olive oil

 

Method

Put olives in a small strainer to drain

Quarter cucumber lengthwise, cut into chunks, put in bowl

Quarter tomato lengthwise, cut into chunks, put in bowl

Cut capsicum into strips, about 5  x 50 mm, put in bowl

Peel onion, cut finely, put in bowl

Put olives in bowl

Cut feta into roughly 8 mm cubes, put in bowl

Drizzle with olive oil, mix gently and keep in fridge until ready to serve
