Berry Pancakes

Ingredients

1 cup unbleached flour

1/8 cup arrowroot

1/2 tbsp baking powder

1/8 tsp cinnamon

1 cup berries (strawberries/blueberries/mixed etc.)

1 1/4 cups milk/coconut milk

1 tbsp olive oil

 

Method

Place dry ingredients in mixing bowl

Chop berries

Add berries to mixing bowl

Create a well in the centre

Add wet ingredients

Mix

Cook in pan (flipping)

 

Serving suggestions

Serve with fresh fruit (banana, kiwi fruit, strawberries etc.) and/or berry sorbet
