Beef Mexican burgers

Serves 4

2 tbsps olive oil

500 g lean beef mince

1 egg

1 can corn kernels

I can red kidney beans

½ medium red capsicum

4 burger buns

Iceberg lettuce, cut finely

Tomato, sliced

4 slices light tasty cheese

1 avocado

Lime juice

Salsa, mild



Add olive oil to a non-stick pan, coat surface, heat pan to medium heat

Crack egg into a large bowl

Drain corn kernels and add to bowl

Drain red kidney beans, mash and add to bowl

Chop capsicum finely and add to bowl

Add mince and mix all ingredients

Divide mixture into 4 equal balls (5-6 if too big), flatten

Cook burgers at medium heat until cooked through

When cooked put a cheese slice on top of each burger so it melts slightly

Cut burger buns in half

Peel avocado and mash with lime juice

Spread avocado on bottom half of bun

Add lettuce, tomato, cheese and burger, to bottom half of bun

Spread salsa on top of bun

Put top half of bun on


Serving suggestions

Serve with a mixture of grape tomatoes, quartered, red onion finely chopped and parsley
