Raspberry and white chocolate muffins

Serves 12

Ingredients

2 cups self-raising flour

3/4 cup caster sugar

1 large egg

1/4 cup vegetable oil

1 cup milk

125 g raspberries

100 g white chocolate baking chips

Method

Preheat the oven to 190oC.

In a large bowl, put flour and sugar

In a small bowl, crack egg and beat lightly

Add egg, vegetable oil and milk to flour mixture, stir gently

Add raspberries and white chocolate baking chips to flour mixture

Stir by hand only  enough to just mix

Put large paper muffin cups in a 12-hole muffin pan

Spoon mixture into muffin cups. Make muffins equal in size.

Bake for 20 minutes at 190oC

Push a wooden skewer into the middle of the largest muffin to check that it is cooked.

Applesauce muffins

Serves 12

Ingredients

125 g butter

2 cups plain flour

3/4 cup caster sugar

2 teaspoons baking powder

1 teaspoon cinnamon sugar

1/4 teaspoon salt

1 large egg

1 cup applesauce

1 apple

Method

Preheat the oven to 190oC.

Put butter in a small container floating in boiling water to melt

In a large bowl, put flour, sugar, baking powder, cinnamon sugar and salt

In a small bowl, crack egg and beat lightly

Add egg, melted butter and applesauce to flour mixture

Peel apple, dice finely and add into mixture

Stir by hand only  enough to just mix

Put large paper muffin cups in a 12-hole muffin pan

Spoon mixture into muffin cups. Make muffins equal in size.

Bake for 20 minutes at 190oC

Push a wooden skewer into the middle of the largest muffin to check that it is cooked.

Apple and cinnamon muffins

Ingredients

60 g butter

2 cups (280 g) plain flour

3 teaspoons baking powder

1/2 teaspoon salt

5/8 cup (125 g) caster sugar

1 cup low fat or skim milk

2 whole (125 g) apples

Method

Preheat the oven to 200oC.

Put butter in a small container floating in boiling water to melt

In a medium bowl, put flour, baking powder and salt

In a large bowl, put caster sugar

Add melted butter to caster sugar (cream together)

Stir the flour mixture into the sugar mixture, alternating with the milk.

Peel apple, dice into small pieces

Stir apple into mixture

Stir by hand only enough to just mix

Put large paper muffin cups in a 12-hole muffin pan

Spoon mixture into muffin cups. Make muffins equal in size.

Bake for 20 minutes at 200oC

Push a wooden skewer into the middle of the largest muffin to check that it is cooked.

Banana muffins

1cup butter

3 large bananas

1cup white sugar

1 egg

1 teaspoon baking soda

1 teaspoon baking powder

1 1cups wholemeal flour

Method

Preheat the oven to 180oC.

Put butter in a small container floating in boiling water to melt

Peel bananas, mash in a large bowl

Add sugar to bananas, stir in

Crack the egg into a small bowl, lightly beat, add to bananas and sugar, stir in

Add melted butter to mixture, stir in

Add baking soda, baking powder and flour to mixture, stir in

Stir by hand only  enough to just mix

Put large paper muffin cups in a 12-hole muffin pan

Spoon mixture into muffin cups. Make muffins equal in size.

Ham and pesto pasta

Serves 6

Ingredients

1 packet (500g) pasta

2 tbsp olive oil

200 g ham pieces (from shoulder ham or similar)

110 g bag of slivered almonds and pine nuts

Pesto

Parmesan cheese

Sprig of fresh basil

Method

Put hot water in a large pot, add a pinch of salt, bring to the boil

Add pasta to pot and cook for time stated on packet

Add olive oil to a medium non-stick pan, coat surface, heat pan to low heat

Add ham pieces to pan, cook gently

Add olive oil to a small non-stick pan, coat surface, heat pan to low heat

Add slivered almonds and pine nuts to pan, cook gently

Drain pasta in a colander

Put 2 tbsp pesto is a large bowl, swirl to spread

Add 1/2 the drained pasta to bowl, stir to mix with pesto

Add the rest of the drained pasta to bowl, put 1-2 tbsp pesto on top, stir to mix

Add ham and slivered almonds and pine nuts, stir gently to mix

Sprinkle Parmesan cheese on top, add a sprig of fresh basil

Banana and strawberry smoothie

Serves 2

Ingredients

1 ripe banana

100 g frozen sliced strawberries

1 1/2 scoops of strawberry sorbet

1 1/2 scoops of vanilla ice cream

1 cup skim lactose-free milk

Method

Separate frozen strawberries and cut into small pieces

Peel banana and cut into chunks

Put half the strawberries, banana, sorbet and ice cream into a blender

Add the milk, put blender lid on, pulse first to mix then blend until smooth

Put the other half of the strawberries, banana, sorbet and ice cream into the blender

Blend until smooth. Add extra milk if it is too thick.
